Named after Hijiridake, a sacred peak in the Southern Alps of Nagano, this daiginjo from Kikusui Shuzo in Iida draws on the pure snowmelt waters of the mountain range. The cold Nagano climate provides ideal conditions for slow, low-temperature fermentation, producing a daiginjo with refined floral aromas and a clean, precise finish.
