Gohyakumangoku rice polished to 60% is fermented with wine yeast, producing elevated levels of malic acid that give this tokubetsu junmai a refreshing acidity alongside soft, rounded sweetness. It won gold at the Feminalise World Wine Competition in 2020, 2021, and 2023 in the junmai category.
