Akabu's Jukusei Namazake is a matured unpasteurized expression from Morioka-based Akabu Shuzo, a brewery that rebuilt from the ruins of the 2011 tsunami under master brewer Kosuke Kudo. Extended aging without pasteurization deepens the flavor, adding a rounded complexity and layered umami while preserving the fresh, lively character unique to nama-style sake.
