Description

Iwate's premium brewing rice Yuinoka is polished to 35% and fermented at ultra-low temperatures, then pressed at -1°C to preserve pure aroma and umami in this junmai daiginjo. Sophisticated fruity notes open on the nose, giving way to a juicy sweetness that resolves cleanly on the finish. The name Gokujonokire, meaning supreme sharpness, reflects the brewery's pursuit of blade-like clarity.
