Abekan Shuzo (阿部勘酒造), founded in 1716 in the port city of Shiogama, Miyagi, has served as the designated sake brewer for Shiogama Shrine for over three centuries, one of the oldest continuous religious brewing relationships in the Tohoku region. This daiginjo uses Yamada Nishiki polished to 40%, the level at which the rice's outer protein and fat layers are stripped away most thoroughly, leaving a core of pure starch that ferments into sake of exceptional clarity and refinement. Shiogama's coastal location, with access to soft, mineral-clean water from the Miyagi highlands, gives the brewery the technical foundation to coax Yamada Nishiki at this demanding grade into a genuinely floral, transparent daiginjo with the elevation and precision the classification demands.
