This Miyoshi Junmai Ginjo from Abunotsuru Shuzo is produced from Yamada Nishiki and released as an origarami murokanama, meaning the sake retains suspended lees and is shipped unpasteurized directly from the tank. Yamaguchi's humid, mild climate provides stable fermentation conditions that allow the ginjo aromatics to develop fully before bottling.
