Yamada Nishiki polished to 30% makes this one of the brewery's most extreme expressions — the ultimate (kyukyoku) sake from Umenishiki Yamakawa in Ehime. The sake has a sake meter value of +3.3 and a low acidity of 1.2, producing a supremely clean, refined daiginjo.
