Junmai Ginjo from Umenishiki Yamakawa, a brewery founded in 1872 in Ehime's Shikoku Chuo city and recognized as a driving force of Ehime's local sake renaissance. The brewery draws on the soft subterranean waters of the Ishizuchi mountain range, which contribute to the gentle, rounded character of the finished sake.
