Brewed from Saitama's local table rice Aya no Kagayaki, polished to 50%, this junmai ginjo is a small-batch project by toji Suzuki aimed at proving that eating rice can rival dedicated sake rice in quality. The result is a clean, well-balanced junmai ginjo with a gentle, unforced character.
