Shinkame Brewery was one of Japan's first producers to commit entirely to junmai brewing, and this daikosha junmai ginjo is a long-aged expression of that philosophy. Extended maturation rounds out the acidity into a mellow, full-bodied sake that shows particular depth when warmed.
