Yamada Nishiki polished to 40% forms the base of this daiginjo from Nakazawa Shuzo in Kanagawa, marketed under the Shikinohakone label. Brewed by the brewery founded in 1825 using entirely hand-crafted methods from koji making to pressing, it features an elegant fragrance and a clean, dry finish best appreciated chilled.
