Description
Rokujuuyoshuu Honjozo Namachozoshu from Imazato Shuzo in Nagasaki is stored unpasteurized throughout the aging period and receives a single heat treatment only at bottling, a method known as namachozo that preserves freshness while allowing controlled development. The honjozo base, with its addition of distilled alcohol, provides a clean aromatic lift that is further preserved by the namachozo treatment. This combination results in a sake with both the brightness of a nama-style and the refinement of a carefully aged product.
