Rairaku Daiginjo 35 from Ibaraki Shuzo in Itami, Hyogo, is polished to an extreme 35 percent remaining, removing 65 percent of each grain of rice to achieve the pure, crystalline core that ultra-premium daiginjo demands. Itami was historically one of the earliest centers of refined sake brewing in Japan, and Ibaraki Shuzo continues that legacy through high-precision production. At 35 percent polish, the fermentation yields a sake of extraordinary delicacy, with refined floral aromatics, a featherlight body, and an exceptionally clean finish.
