Okarakuchi (Extra Dry) Fukugao from this 1897-founded Sanjo City brewery uses Gohyakumangoku rice at 60% polish for a pronounced, assertive dry expression brewed with extra-soft Ikarashi River water. Niigata's extra-soft water is historically associated with slow fermentation and clean, dry-finishing sake, and this boldly dry expression from the prefecture's only Sanjo-based brewery pushes that regional tendency to its most emphatic conclusion.
