Kumenosennin Junmai Ginjo uses Matsuyama Mii, Ehime's heritage rice, in a junmai ginjo named for the 'Sage of Kume' (久米の仙人), a legendary ascetic who fell from the sky when distracted by a beautiful woman. Goto Shuzo in Kuma District, Ehime, brings this folkloric character into a refined, clean ginjo shaped by the Kuma River's soft water.
