Banshu Yamada Nishiki brewed by the yamahai method, which develops a natural, complex acidity and deeper body compared to standard fermentation. At the Kozaemon brewery in Mizunami, Gifu, the yamahai style adds breadth to the Yamada Nishiki's innate clean umami.
