Tokubetsu junmai using Shinano Miyama Nishiki, pressed fresh and bottled as a nakagumi (middle-run) namazake to capture the cleanest portion of the pressing. The raw bottling preserves the slight effervescence and bright, fragrant character of newly made sake.
