Iinuma Honke, located in Shisui-machi, Chiba, holds a brewing lineage of over 400 years, receiving its first permission to brew sake for shrine dedication from the Edo Shogunate during the Genroku era. The Kinoene brand underwent a significant rebranding in April 2023, unifying its identity under the '甲子 (Kinoene)' mark, now in its 16th generation of the Iinuma family. The Okarakuchi Hatsushibori Junmai Namagenshu is the brewery's first pressing of the new season, released unpasteurized (nama) and undiluted (genshu), capturing the bold, vibrant energy of the season's opening fermentation. Chiba's position along the Pacific coast moderates winter temperatures, giving brewers a climate that allows gradual, expressive fermentation of this assertively dry style.
