Ikegame Junmai Ginjo 55 Murokanamagenshu Seme is the final-press fraction (seme) from Ikegame Shuzo in Kurume, Fukuoka, obtained at the end of pressing when maximum pressure is applied to extract the remaining liquid from the rice mash. Seme is characterized by a fuller, more intense, and sometimes earthier flavor profile compared to the arabashiri or nakadori cuts, with higher concentrations of amino acids and extractives. Bottled at 55% polishing ratio without filtration, pasteurization, or dilution, it represents a bold and uncompromising expression of the ferment.
