Akaiwa Omachi from Okayama Prefecture, polished to 50%, is at the heart of this junmai daiginjo, which replaced the earlier Kahodenso Akaiwaseven expression. Fruity aroma is complemented by the thick, deep umami inherent to Akaiwa Omachi, and the sake is bottled as genshu for maximum character.
