Hokuyo Daiginjo Fukurozurikizake is a premium raw sake from Honjo Shuzo in Toyama, produced using the fukurozuri method in which fermented mash is placed in cloth bags and allowed to drip freely by gravity without pressing, collecting the most delicate, crystal-clear sake drop by drop. Made from Yamada Nishiki rice polished to 50%, this undiluted, unpasteurized daiginjo captures the refined aromatics and pure flavor achievable only through this labor-intensive extraction technique. Toyama's snowmelt water from the Tateyama mountain range and cold coastal climate provide an excellent foundation for this meticulous premium production.
