Hokkan Shizukutori Daiginjogenshu Namatsume is a daiginjo-grade undiluted sake from Hokkaido, produced by the shizukutori gravity-drip method, in which sake flows freely from hanging fermentation bags without pressing to collect only the purest, most delicate portion of the mash. Bottled as genshu without water dilution, it preserves the full concentrated character of that premium extraction, and the single pasteurization at bottling (namatsume) maintains fresh aromas alongside its polished depth. Hokkaido's exceptionally cold climate and pristine snowmelt water provide ideal conditions for this intensive, high-precision style of daiginjo production.
