The use of Hattannishiki rice, Hiroshima's signature sake rice prized for its ginjo-favorable qualities and aromatic potential, reflects a tradition of local terroir expression in Saijo's soft-water brewing environment. Hakubotan is associated with Japan's soft-water brewing revolution of the late 19th century, which helped pioneer the elegant, aromatic ginjo style now recognized worldwide.
