Hananotsuyu Tokubetsu Junmai is produced at the historic Jojima brewery in Kurume, Fukuoka, an operation whose roots reach back to 1745 in one of Japan's most concentrated sake-brewing districts. As a tokubetsu junmai, it is a pure rice sake elevated above the standard junmai classification through higher polishing or a distinctive production specification. The Jojima tradition of using softened water to produce smooth, approachable sake informs the gentle, food-compatible character of this expression.
