This 2002 vintage umeshu uses Benisashi plums from Fukui Prefecture, known for their light crimson skin when ripe and fragrant, substantial flesh. Steeped in aged sake from the same year with rock sugar, the resulting liqueur carries the mellow roundness of the koshu base alongside the plum's clean fruit acidity.
