This 1999 vintage umeshu combines Fukui Prefecture Benisashi plums and rock sugar with aged sake brewed in the same year. The mellow base koshu, matured at ambient temperature in the Gifu storehouse, integrates with the plum's bright acidity to form a cohesive and richly structured plum liqueur with 12% alcohol.
