This 1978 honjozo is made from Nippon Bare rice at 70% polish and aged under ambient conditions in the Gifu brewery's earthen-walled storehouse. The addition of a small amount of distilled alcohol at pressing sets it apart from the junmai vintages, while decades of room-temperature maturation coax out the dry, umami-laden profile characteristic of this year.
