Yamada Nishiki, the premier sake rice, is used in this daiginjo from Kurashiki, Okayama, where the brewery relies on an exceptionally rare wooden pressing machine and traditional fune pressing to extract the sake gently. The slow, low-pressure pressing produces a soft, mellow character with a clean rice sweetness. The Yumekurashiki Retoro label pays homage to Kurashiki's famous historic townscape.
