This Abekan Jummaiginjo shares the same foundation as its counterpart: Kura no Hana rice polished to 55%, brewed at Abekan Shuzo's Shiogama facility where three centuries of sake production for Shiogama Shrine have shaped the house character toward clean, measured, food-forward brewing. Kura no Hana, a proprietary Miyagi cultivar, is bred for compatibility with the prefecture's soft snowmelt water, producing sake with a gentle, rounded body and a quiet fruitiness that distinguishes Miyagi's ginjo style from the more perfumed Nada and Fushimi schools. Two bottlings of this expression exist in the lineup, reflecting the brewery's seasonal production schedule while maintaining consistent rice and polishing parameters at the core.
