- 1927Founder Kumakichi Shintani, formerly a brewery worker elsewhere, bought a defunct brewery and founded the company.
- 2007Facing closure after the aging master brewer retired, converted to a four-season brewing facility able to brew year-round.
- 2015Fumiko Shintani, who would become the brewery's next toji, left her nursing career to devote herself to sake brewing (the origin story behind the flagship 'Shinki' brand).
- 2018-10The role of toji passed from husband to wife Fumiko Shintani, who became the only female toji in Yamaguchi Prefecture at the time.
- 2018-11Launched the new 'Bunbun' series as the first release under the new toji.
- 2018-12Relocated the brewing facility and completed a new brewery building.
