Un junmai ginjo brassé avec du Yamada Nishiki poli à 50%, vieilli environ deux ans à température ambiante avant sa mise en vente. Le vieillissement prolongé produit une texture douce en bouche avec des arômes de fruits secs et de légères notes de noix, ainsi qu'un umami profond et arrondi. La valeur du compteur de sake est de +7 et l'acidité de 1,8, exprimant un caractère sec et mature, à son meilleur à température ambiante ou chauffé.
