Du riz Akita Sake Komachi est utilisé pour ce ginjo brassé chez Naba Shoten, brasserie de la ville portuaire de Tsuchizaki, à Akita, dont les origines remontent à 1815. La brasserie cultive tout son koji à la main, selon la méthode traditionnelle dite du couvercle à koji.
