C'est un junmai aux arômes calmes mais délicats, avec un équilibre exquis entre acidité et caractère sec. Le riz est poli jusqu'à 60%, soit le standard Junmai Ginjo, et fermenté soigneusement à basse température comme un Daiginjo, ce qui permet d'apprécier un goût beau et raffiné. Sa texture fine et douce en bouche sublime encore davantage le goût des plats. Un sake mi-sec, doux et élégant, à l'acidité tendre et à l'umami raffiné, poli jusqu'aux 60% du standard Ginjo.
