Koshinohana Daiginjo Tobinkakoi est un daiginjo de Koshinohana Shuzo à Niigata, pressé selon la méthode tobin (bouteille de 18 litres), où le sake de première goutte est recueilli par gravité dans des jarres individuelles sans pressage mécanique. Cette technique laborieuse ne produit qu'un faible volume de sake particulièrement délicat et aromatique par lot.
