Description
Brewed using the ichidan jikomi method, a single stage process rather than the traditional three stage addition, this muroka nama genshu is unfiltered, unpasteurized and undiluted. It opens with notes of carrot cake, orange marmalade and honeysuckle, backed by chamomile, dried apricot and a savory soy sauce like depth. Bright, sharp acidity reminiscent of green apple and lemon juice drives the palate before settling into a more delicate balance.
