Daiginjo brassé à partir de Kairyo Shinkou, un riz à sake patrimonial quasi disparu que la brasserie a relancé grâce à une culture contractuelle dédiée à Kahoku-cho, Yamagata, poli à 40%. L'umami profond et expressif du riz et un gracieux arôme ginjo se conjuguent dans un daiginjo riche en saveur avec une finale nette.
