Junmai Daiginjo Udatsu tire son nom de l'udatsu, les distinctifs murets coupe-feu surélevés que l'on trouve sur les maisons de marchands historiques de Mino, à Gifu, symboles de richesse et de prestige. Élaboré par la Kosaka Shuzojo comme un Junmai Daiginjo, il bénéficie d'un polissage très poussé du riz et d'une fermentation au riz pur, aboutissant à une expression élégante et parfumée de la tradition brassicole de Gifu.
