Asamai Shuzo applique la méthode traditionnelle kimoto à ce Junmai, utilisant du Miyama Nishiki poli à 60 % et des bactéries lactiques cultivées naturellement pour développer un pied de cuve d'une plus grande complexité. En tant que brasserie exclusivement Junmai depuis 2011, Amanoto n'utilise que du riz Akita d'origine locale cultivé dans un rayon de 5 kilomètres du site de brassage de Hiraka Town.
