Elaborado con Ine Mankai, una antigua variedad de arroz morado-negro nativa de la localidad de Ine en la península de Tango en Kyoto, pulido al 88% para conservar los pigmentos naturales del grano. Las antocianinas del arroz antiguo crean un tono rosa-rojo característico, con un sabor agridulce que recuerda al vino de frutas y un umami complejo y estratificado.
