Un daiginjo de esta kura de Fukuoka fundada en 1717, elaborado con Yamada Nishiki pulido al 40 % y extraído únicamente por gravedad mediante el método shizuku (goteo), sin presión mecánica. La extracción sin presión produce un sake especialmente delicado y puro, con la expresión plena del Yamada Nishiki de Itoshima: aroma ginjo elegante, umami de arroz profundo y el refinamiento del pulido daiginjo.
