Dewa Sansan, el arroz de sake emblema de Yamagata, es la base de esta edición estacional hiyaoroshi, embotellada como namazume genshu tras una maduración estival. Los sakes hiyaoroshi reciben una sola pasteurización en primavera y se envían en otoño sin un segundo tratamiento térmico, aportando un carácter suave y redondeado.
