El Gohyakumangoku, el arroz sakamai predominante del Hokuriku, aporta un carácter limpio y ligero, bien adaptado a la producción de Honjozo. La influencia del yamahai añade una sutil profundidad láctica al estilo de la casa, de otro modo vivo y seco.
