El arroz Akebono de Okayama, pulido al 70 %, produce un honjozo con un aroma silencioso y contenido y un paladar de cuerpo medio que se presta igualmente bien servido frío o calentado. Producido por una destilería en Akaiwa, Okayama, que ha suministrado sake local desde su fundación en la era Showa, utilizando arroz cultivado en el clima suave y soleado del Mar Interior de la prefectura.
