Kibinogimpuu se elabora en una pequeña destilería de Okayama utilizando arroz Omachi local de primera calidad, una variedad apreciada por su gran shinpaku y su carácter rico y de cuerpo pleno. La destilería opera en el distrito de Bizen Ichinomiya desde hace casi nueve décadas, manteniendo un enfoque arraigado localmente en la producción de sake. Una acidez moderada y un final suave y limpio caracterizan el estilo de la casa.
