El arroz Gohyakumangoku sustenta este ginjo junmai de una bodega cuyo toji está considerado entre los cuatro reyes celestiales de la tradición de maestros cerveceros de Noto. La naturaleza limpia y seca de la variedad se expresa a través del agua suave del monte Ioji, produciendo un sake con acidez crujiente y un final gastronómico.
