Junmai Daiginjo Nishingoten de Kitanohomare Shuzo en Hokkaido toma su nombre de las grandes mansiones de arenques (nishin goten) que bordeaban la costa de Hokkaido durante el auge del arenque del siglo XIX. Como junmai daiginjo, el arroz se pule al menos al 50 por ciento antes de la fermentación, produciendo un sake de pureza excepcional y aromas refinados. El clima frío de Hokkaido y su agua limpia sustentan la fermentación precisa requerida para esta categoría de primer nivel.
