El Ichinokawa Ginjo de Ena Jozo se nutre de los 200 años de historia de la destilería en Nakatsugawa, Gifu, donde el agua de manantial blanda y cristalina desciende desde el monte Futsumori hasta la destilería únicamente por gravedad. Elaborado con Hidahomare, el arroz de sake de Gifu cultivado localmente que la destilería promueve activamente junto a los agricultores de la zona, logra un refinado aroma ginjo de hierbas frescas y pera con un final limpio y fresco de montaña.
