Hyakujuro Aozura es un junmai ginjo producido por Hayashi Honten en Kakamigahara, prefectura de Gifu, elaborado con arroz Hatsushimo cultivado localmente y pulido al 60 %. La destilería utiliza agua ultra-suave extraída de los flujos subterráneos de la cuenca del río Nagara y la levadura Gifu G desarrollada localmente, produciendo un aroma fresco y vegetal con acidez equilibrada en un estilo seco.
