El método tradicional kimoto, en el que bacterias lácticas naturales cultivan el iniciador de levadura sin adiciones artificiales, sustenta este junmai ginjo de una cervecería de Saitama dedicada íntegramente al sake de arroz puro desde 1987. Un mínimo de tres años de envejecimiento antes de su lanzamiento permite al sake desarrollar un umami en capas y un final limpio y persistente.
