La fermentación kimoto y al menos cinco años de envejecimiento a temperatura de hielo definen este junmai daiginjo de una kura de Saitama que se convirtió en la primera cervecería all-junmai de posguerra de Japón en 1987. El agua dura del acuífero de Chichibu y la larga maduración dan un sake de profundidad notable, que se disfruta mejor caliente entre 45 y 55 grados Celsius.
